PERFECT PANCAKES

In my family, it is a well known fact that when you visit my house, there will be pancakes for breakfast at least one morning while you are here. I guess because we live a few hours away from our family, it always feels a little special when they come to stay with us, so I like to celebrate that with a yummy batch of pancakes.

For my brother and sister, I usually get up early with their kiddos and get them to help me so their parents can get some sleep. They all have toddlers, and I do remember how completely exhausting that can be. I actually get sleep these days, so I don’t mind letting them catch a few zzzzzz’s, plus it gives me an opportunity to spend some time with my nieces and nephews. So far I have had no complaints.

My 21 year old niece like to bring her friends to visit, because she gets a kick out of the excitement that follows when they wake up to pancakes fresh from the stove. I never imagined a bunch of 20 year old’s would be so grateful for pancakes.

This time around, the guest was my 10 year old niece, who asks about the pancakes from the moment she arrives until they actually appear on the breakfast table. “When are we going to have pancakes Auntie Vic? Can I help? Can we have them in the morning?”

Lucky for her I actually enjoy pumping out a batch of pancakes every now and then. So she always ends up getting her wish. Although, this time she almost missed out, we got down to the last day of the school holidays and I thought I better do them for her or she might not come back! But seriously, we actually had a pretty boring visit this time around. I’ve been unwell, so we’ve just hung out at home, the girls have spent most of their days playing Just Dance on the X-box and pole tennis in the backyard.

The girls like to smother the pancakes in ice-cream and syrup, but I personally like them with a little jam and whipped cream, more like a pikelet. Either way, they taste pretty good, and they’re a nice treat.

Cook Time: 20 minutes

Ingredients

  • 3/4 cup milk
  • 1 egg
  • 1 cup self raising flour
  • 1 tablespoon caster sugar
  • melted butter, to brush

Instructions

  1. Place all ingredients into a large mixing bowl.
  2. Combine all the ingredients with an electric mixer until mixture is smooth.
  3. Place a fry pan on a low-medium heat, and place some butter to melt
  4. Spoon some batter into the heated fry pan
  5. When bubbles start to form on the top of the pancake, flip them over to cook the other side.
  6. Cook on the other side for a few minutes, then remove the pancake and place on a plate to cool.
